Hors D' Oeuvres;
Chicken Satay, Spicy Peanut Sauce
For The Distinctive Epicurean and Wine Enthusiast

2 lb.    boneless chicken breasts
2          cloves garlic, chopped
2 t        fresh cilantro, chopped
2 t        light brown sugar
1/2 t    black pepper
1 t        salt
2 t        fresh ginger, chopped
2 T       lime juice
4 T       olive oil

Spicy peanut Sauce:

1 cup  peanut butter
1 t        cayenne pepper
2 T       honey
2 T       lime juice
1 cup   heavy cream

1.   Mix marinade ingredients together in a bowl and whisk
2.  Cut chicken into 2 inch cubes, place in mixture and
marinate for an hour.

2.  Thread chicken pieces onto one end of satay sticks.
Broil or grille and baste with marinade. Serve with peanut
sauce for dipping.

Peanut sauce:

In a sauté pan, mix ingredients all together and warm up
on low heat till smooth. Sauce should have a sweet / spicy
peanut flavor.  Taste and adjust ingredients accordingly.
